Slimming World: Sweet potato patties

Sweet potato patties that are toddler approved and Slimming World friendly

Servings: 6 patties

Ingredients:
Sweet Potato
Broccoli
Cheddar Cheese
Cinnamon

Instructions:
  • Roast 2 sweet potatoes in the oven on 180 for around 35min or until soft
  • In the meantime boil a good handful of broccoli for around 10min
  • Once Sweet potato is cooked and slightly cooled, cut them in half and scoop out the potato from the skins into a bowl
  • Drain broccoli and add to the potato
  • Add a handful of grated cheddar cheese and a sprinkle of cinnamon
  • Mash together and set aside to cool down
  • Once cooled, with your hand, scoop some mash into your palm to form a ball, then lightly press down onto some tin foil to make a patty shape
  • Once you've used all your mash (should make around 5 - 6 large patties) place under the grill to crisp and flip over in between to grill both sides
  • Serve with a crunchy salad
