Parenting: Quick and easy lunch ideas for little ones

Do you struggle what to feed your little one each day once they are fully weaned? If like me, I sometimes find it hard to get a good balanced diet. You want to add variety to their diet, make sure they are getting the nutrients they need, but also quick and easy to prepare. Through my trial and errors I have mastered a few tricks and ideas to make it that little easier to feed your little ones, and sharing with you some quick and easy meal ideas I feed my baby boy.

My son has recently turned one and has been enjoying these kind of meals for the last few months now.

1. Fish fingers and vegetables

2. Tomato Pasta
What I do is batch cook the tomato sauce and cook the pasta fresh when he has this. Once you've added the pasta to the sauce then it tends to be too dry to eat the next day. So always make the pasta fresh but batch cook the sauce mixture for quickness.

TO MAKE PASTA SAUCE
  • Add chopped pepper, onion, courgette and broccoli to a pan and stir fry till soft
  • Add a can of chopped tomatoes and some herbs (I use dried oregano) and simmer for around 25min
  • Then blend for a smooth thick texture (like soup) 
  • Divide into little pots and put in the freezer
It's makes so much and really goes a long way. I get a pot out in the morning and come lunch time I add it to my fresh pasta, and add cheese on top! My boy loves it and full of goodness.

3. Cauliflower cheese with sweet potato and veg
Boil up some sweet potato and vegetables, including the cauliflower. Very easy and if you do a big batch it will keep in the fridge for a few days

TO MAKE CHEESE SAUCE
  • Melt some butter into a pan (approx 1 heaped tbsp) 
  • Add plain flour and mix (approx 3 tbsp)
  • Turn heat down and add a little milk and stir continuously until smooth
  • It will start to thicken so keep gradually stirring in milk until thick and smooth
  • Turn off the heat and add grated cheese and stir in until melted.

4. Butter beans in Tomato sauce and cucumber
Boil your butter beans until soft and I add them to the pasta sauce I pre-made (see above). You could also do this with cannelloni beans. I added cucumber on the side but you can also add vegetables. I also make this dish sometimes with chicken

5. Scrambled egg on toast
My boy loves toast and it's so easy for me to make. I scramble one egg in a jug and add a little butter, then I put in the microwave for approx. 30 seconds. I added a little babybel on top as he loves cheese.

6. Grated apple and cheese spread sandwich
I try to limit the amount of bread my boy eats because of the salt. But every now and then I will give him a sandwich for lunch which he loves. I spread the bread with cheese spread instead of butter and grate some apple - it's a winner!

7. Chicken with Sweet potatoes with cheese and veg
Adding cheese to mashed sweet potato is a great way of adding fats to a meal!When I cook chicken for an evening meal I always make sure I leave enough to cover a few meals for little man. I don't go out of my way to roast a chicken for lunchtime, this will always be from the evening before, and I wouldn't leave it in the fridge for longer than a day.

8. Sausages, mash potatoes and beans
Sausages are a firm favourite in my household, I use HECK sausages, pork and chicken. I add cheese to the mash to make it more creamier.

These portions look quite big but I like to pile the plate up because half of it ends up on the floor!

With lunch and dinner I always give my son a dessert after his main, this will either be a little pot of yogurt or some fruit. He's a great eater and loves most things I give him.  For dinner meals I usually give my son most things that we eat in the evening - He loves a spag bol or a mild chilli con carne. I always make surplus and freeze portions as well so I always know I have something in the house!
