Slimming world - Roasted vegetables with bacon and easy potatoes

Slimming World roasted goodness 


This has to be one of my favourite and easy dinner choices during the week. It's syn free and packed full of speed foods, so easy to make and tastes yummy! You can eat it with anything, or on its own.

Prep time - 5 minutes
Cooking time - 45 minutes

Ingredients:
Potatoes
sprouts
onion
mushrooms
Smoked bacon (fat cut off)
garlic
oregano
Fry light

Method: Use small potatoes and cut them into halves, keeping the skin on. Part boil for 15 minutes.
Spray fry-light in your oven proof dish and pour in your potatoes. Chop up a white onion and 1 garlic and add to the dish along with sprouts and mushrooms. sprinkle with dried oregano, salt and pepper then spray some more fry-light on top and pop in the oven. Roast on a medium to high heat for around 15-20 minutes. meanwhile slice your bacon into small pieces (around 4 slices). Take out your dish and give it a little shake, sprinkle the bacon on top and place back in the oven for another 15 minutes, or until bacon is nice and crispy.

Its that simple and so satisfying. I've eaten this on its own, or sometimes I like to grill some chicken with it.

You can really roast anything in this one dish wonder. I've cooked this before with red onion, broccoli, red pepper and carrots. equally as delicious.
